Cajun Meat Loaf
2 bay leaves
1 teaspoon salt
1 teaspoon cayenne pepper
1 teaspoon black ground pepper
1/2 teaspoon white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
4 tablespoons butter
3/4 cup chopped peeled onion
1/4 cup chopped celery
1/2 cup chopped green bell pepper
1/4 cup chopped green onion
2 teaspoons garlic cloves, crushed
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk
1/2 cup tomato ketchup
1 1/2 pounds lean ground beef
2 large eggs, beaten
1 cup dry bread crumbs
In a small bowl, combine bay leaves, salt, cayenne pepper, pepper, white pepper, cumin, and nutmeg; set aside.
In a skillet, melt butter and sauté onions, celery, green bell pepper, green onions, garlic, hot pepper sauce and Worcestershire sauce. Stir in spice mixture and cook for about 6 minutes.
Stir in evaporated milk and ketchup. Continue cooking for about 2 minutes, stirring occasionally. Remove from heat and let it cool.
Preheat oven to 350°F (175°C).
Place ground beef in a mixing bowl. Add eggs, the vegetable mixture and dry bread crumbs. Remove bay leaves and mix well. Transfer meat mixture to an ungreased loaf pan. Bake, uncovered for 1 hour.
Makes 8 servings.

| Quote: | STEAMED FISH WITH SAMBAL TOMYAM
Ingredients
1.5kg fish (any fish you want to steam), cleaned
1 inch ginger, shredded
4 – 5 tbsp oil
Spices – ground
100g red chillies
120g shallots (bawang merah)
2 cloves garlic (bawang putih)
2 stalks lemon grass (serai)
1cm galangal (lengkuas), sliced
2 tbsp tomyam paste
3 kaffir lime leaves (daun limau nipis)
Seasoning
60ml fish sauce
1/8 tsp pepper
1 tbsp sugar or to taste
1/2 tsp salt or to taste
Method
Heat oil in a saucepan, sauté ground spice ingredients until fragrant and oil rises. Adjust seasoning to taste.
Place cleaned fish on an oval plate. Arrange shredded ginger on the fish and steam over rapid boiling water for 10 – 15 minutes. Remove the plate from the steamer and pour off excess liquid.
Spoon 2 – 3 tablespoons prepared tom yam sauce over the fish. Add some mint leaves and serve immediately. |
